Spanish Tortilla
 

Ingredients:
2 TBS. chopped onion ¼ C. cooking oil
3 eggs, beaten 2 large potatoes, diced or slivered **
¼ C. green, red, and yellow peppers ½ C. chopped ham

**frozen French fries can be used instead.

Salt potatoes and onions and add to hot oil. Cook over high heat until done, sitrring oftern.

Beat eggs in a bowl and salt. Add cooked, drained potatoes. Eggs should come to the top of the potatoes.

Mix together well and pour into hot skillet. Reduce heat. Even out potatoes in pan.

When eggs are cooked around edges, put a large, inverted plate over the skillet and turn upside down so the totrilla is on the plate. Slide tortilla back into skillet. (the partially cooked side is now up.) Repeat this procedure until center is firm.
